Grilled Tequila Lime Chicken

Last night I served J and I Grilled Tequila Lime Chicken and homemade Key Lime pie.

J. grilled up the chicken on the bbq while I got the broccoli and rice ready. I’d rate it as:
Ease of Preparation: 4/5 – it soaked in the lime and tequila mix over night. The hardest part was squeezing a cup of fresh lime juice.
Taste: 4/5 – The skin of the chicken held the most taste. It was pretty yummy. I guess I’d make it again.


Key Lime Pie – well actually the were the normal Mexican limes from the grocery store, so it was just lime pie. It was yummy, but a little too limey! Maybe it is best served with just little slices!

I cured the problem of squeezing the limes by buying a citrus juicer appliance from Walmart. It was only $7.88 ! You just have the cut the lime in half and hold it on the top of the machine and it spins and grinds out the juice!
Ease of Preparation: 4/5 – it was really easy to make. Crushing the graham crackers for the crust was probably the hardest.
Taste: 3/5 – A little too limey – next time I would either skip the lime zest or use way way less than the recipe asks for.

Another movie to review: Assault on Precinct 13 I give it a 2/5 star. We caught it on the movie channel last night. It was watchable, but predictable, and some things just didn’t make sense. Drea de Matteo was in it and I like her (from Sopranos and Joey). Worth watching on TV, don’t bother paying for it unless you’re really stuck for a movie.

I’m continuing my cooking streak. In fact I even watched Emeril from the treadmill today! I made soft tacos the other day with a home-made raw salsa. SO YUMMY. 4/5 ! I took some ideas from a bunch of raw salsa recipes. I used the food processor to chop up:

1 stalk of celery
4-5 tomatos
2 onions
3 jalapenos (seeds removed)
the juice of one lime
hand full of fresh cilantro

Once it was all sliced up I put a chopper blade in and blended it more. It was spicy and fresh and juicy. I really enjoyed it. There was plenty so I froze some in small amounts in ziplocs for future tacos or nachos.

I just made the marinade for the tequila lime chicken I’m cooking tomorrow night. I can’t wait – it’s going to be good!

J. and I went to America today. We did a little shopping. I spoiled us at the Bath and Body Works store. Then we had a pizza from Little Caesars (since the pizza in the Canadian Sault SUCKS SO BAD – I could go on a huge rant on here on why the pizza in the Sault is so bloody awful but I could sum it up by saying they cut EVERY pizza in squares, and that WRECKS what wee potential the crappy pizza might have had) Anyway, where was I? Yes I even treated myself to a few mouthfuls of cherry coke (I gave up all pops 2 years ago (2 years, 3 months) to be exact). The breeders always buy Cherry Coke when I’m coming to visit so I decided long before I went out there in December that I’d break my streak and have them. They ended up only having diet cherry coke and I had a few and they were so awful and unsatisfying so I was dying to try a “real” cherry coke. I was really disappointed. That amazing quench of a cherry coke just doesn’t exist when you aren’t addicted to soda anymore. It was chemically and fizzy and I can go back to not drinking them again.

We also did some looking at light fixtures for my kitchen. Even though my kitchen is smaller than most people’s pantries, it is painfully dim. Now that I’m a chef-wanna-be, I need light! Especially with all these sharp knives I got for Christmas! So hopefully Dad can help me out if/when he comes up. The light now isn’t in the centre of the ceiling so I’m not sure what will work. Possibly this one that had two tracks coming off the centre that are easily re-angled with 4 lights total. Or I might just install a light under the cupboards. Not sure yet.

Okay there’s my quick and fast update (ya ya looks long, but I talk fast). I’ll let ya know how the grilled tequila lime chicken is tomorrow.

11 weeks old!

Monty is 11 weeks old now. J. took Monty and I along for a trip out to the woods today. We couldn’t walk in too far, Monty’s just a little guy still, but he had a good time and was so good riding in the truck!

Spaghetti with Sauteed Onions, Feta and Herbs

I watched the Food Network today and went grocery shopping. I made the Spaghetti with Sauteed Onions, Feta and Herbs recipe that I saw on one of the cooking shows today.

It was easy to make. I have never had feta cheese before. It’s a different combination of tastes for my poor sheltered tastebuds, but it was pretty good. I’d eat it again. I think I’d make a few changes. Maybe serve it as a side dish to lemon chicken or something, instead of eating it as a main dish like I did. Marjoram is very nice smelling. I had never bought it before either. Actually it was probably the first time I’ve never bought a fresh herb.

I give this one Five Stars!

I just watched “Million Dollar Baby” on the movie channel. 5/5 stars. It’s a boxing movie with Clint Eastwood, Morgan Freeman, and Hilary Swank. Great movie. There was an aspect of it that made me super-emotional because of something personal I’ve gone through lately, but I don’t imagine everyone will have the same reaction. I don’t want to say much more about it, I don’t want to spoil it for you. One of the best don’t miss scenes is when Clint Eastwood resets Hilary Swank’s broken nose between rounds. Crunch….. Ewwwwwwwwww….

Happy New Year!!

Let me catch up the movie reviews first. Four Brothers I give 4/5 stars. Lots of action and suspense. The soundtrack started amazing but the shootings progressed it turned more gangster rappy. Lots of shooting and death, but underneath there is a good story of family with four adopted brothers.

The other movie we watched the other night was The Brothers Grimm. The sets were amazing. The story was odd. The funnest part was picking out the fairy tale references. Overall, 3/5 stars from me.

I’m all excited to start cooking. I have about 30 new knives and new cutlery and a new cutting board and new pots and pans from my lovely family for Christmas. I also bought a garlic press yesterday because I’ve always wanted one. The new pepper mill I wanted too. So now it’s time to cook. I like cooking but I never do it because I’m usually just cooking for myself and I find no excitement in that. Well I’m pumped up to start cooking again. Even if I have to buy a little freezer and freeze the rest of the portions if I’m cooking for only me. I’ve got the food network on right now, maybe I’ll pick up some tips ;-)

Julie called at 1:30am today from Manhatten. She went to NYC with Brian and Leanne and are staying at Gerrit’s work apartment. They were in Times Square last night and said the ball that drops is so tiny it’s funny.
